  8.  Revised Version of “Addictive Sweet Potato Burrito” Recipe

    • olive oil
    • 1 large onion, chopped
    • 4 cloves garlic finely chopped
    • 2 large cans of kidney beans, drained and rinsed
    • 2 cups water
    • 2 tablespoons ground cumin
    • 4 teaspoons of mustard (dijon/honey)
    • 1 pinch cayenne pepper, or to taste
    • 3 tablespoons soy sauce
    • 4 cups cooked and mashed (1-2) sweet potatoes 
    • 4 (10 inch) flour tortillas, warmed
    • 2 cups of shredded Monterey Jack Cheddar cheese
    Heat large skillet/wok and saute onion and garlic until soft in olive oil. Mix in beans and sweet potato mash. Combine water, mustard, and cumin and whisk together. Stir in water/mustard/cumin mixture. Add soy sauce to taste.  Divide bean mixture and mashed sweet potatoes evenly between the warm flour tortillas. Top with cheese. Fold and tuck tortillas “burrito style”.  In a separate skillet, deep-fry the burritos in canola oil. We used tongs to rotate the burrito to brown all sides. If you’re looking for a healthier option, try baking the burritos in foil for 12-15 minutes.
